Ingredients:

  • 1/4 cup short-grain rice
  • 3 tablespoons cornstarch
  • 5 cups milk
  • 6 tablespoons sugar
  • 2 teaspoons rose water
  • 3/4 cup pistachio nuts, ground
  • 1/4 teaspoon ground cinnamon
  • Honey (for serving)

Instructions:

Step Instruction
1 Blend the ground rice and cornstarch together into a smooth paste, gradually adding a little of the cold milk.
2 In a saucepan, bring the remaining milk to a gentle boil.
3 Lower the heat and stir in the sugar until dissolved, maintaining a gentle simmer.
4 Gradually add the ground rice mixture to the milk, stirring constantly with a wooden spoon to prevent lumps from forming.
5 Simmer the mixture on very low heat for 10-15 minutes, or until it thickens, stirring often to prevent burning, especially on the bottom of the pan.
6 Stir in the rose water and half of the ground almonds, and simmer for an additional 5 minutes.
7 Allow the custard to cool for a few minutes, then pour it into a serving bowl or individual serving dishes.
8 Sprinkle the remaining ground almonds and all of the ground pistachios on top, then dust with ground cinnamon.
9 Serve the custard with syrup or honey on the side for added sweetness.
10 Note: It is essential to use short-grain rice to achieve the proper consistency. Grind the raw rice in a blender or food processor until finely ground.
