Ingredients:

  • 1 cup basmati rice
  • 1 lb beef, boiled and shredded
  • 1 large onion, thinly sliced
  • 1 large tomato, sliced
  • 2 tbsp ghee (clarified butter)
  • 2 chicken bouillon cubes
  • 3 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 3 tsp coriander powder
  • 3 tbsp cashews
  • 2 tbsp pistachios
  • 50g fresh coriander leaves (cilantro)
  • 50g green cardamoms
  • 50g bay leaves
  • 8-12 black peppercorns
  • 4 mint leaves
  • Salt to taste

Instructions:

  1. Fry Beef: Heat ghee in a wok over medium heat. Fry the boiled beef until it turns golden brown on both sides. Remove the beef and drain excess oil on paper towels.

  2. Cook Onions: In the same wok, except for 2 sliced onions, add all the onions and stir-fry for 7-10 minutes until translucent.

  3. Prepare Spice Mix: Add turmeric powder, red chili powder, coriander powder, green cardamoms, bay leaves, and half of the black peppercorns. Mix well until it forms a dry paste.

  4. Add Chicken Stock: Stir in the chicken bouillon cubes. Add tomato slices and cook until the tomatoes release their juices and oil begins to float on top.

  5. Combine Beef: Gently crush the fried beef by hand and add it to the wok. Mix well and season with salt to taste. Cook on low flame until the beef is tender.

  6. Fry Onions & Nuts: In a separate skillet, heat oil and fry the remaining sliced onions until light brown. Remove from heat. Add the remaining black peppercorns, bay leaves, and green cardamoms to the same oil. Toss in cashews and pistachios and fry until golden brown and aromatic.

  7. Cook Rice: Drain the rice and add it to the skillet with the fried onions and nuts. Mix well. Add 5 glasses of water and a pinch of salt. Bring to a boil, then reduce the flame and cover.

  8. Layering: As the rice absorbs water, remove half of it and layer the prepared beef curry on top. Garnish with mint leaves, fresh coriander leaves, fried onions, cashews, and pistachios. Spread the remaining rice on top and garnish again.

  9. Final Cooking: Cover the skillet and cook on low flame for 10 minutes to allow the flavors to meld together.
