Ingredients:

Instructions:

  1. Preparation:

    • Begin by slicing the yellow onion, mincing the garlic cloves, finely chopping the lemongrass stalk, grating the ginger root, and zesting the fresh lemon.
    • Tear the kaffir lime leaves into smaller pieces.
    • Cut the chicken breasts into bite-sized pieces.
    • Dice the red bell pepper and trim the snow peas.
    • Drain the baby corn.
  2. Stir-fry Aromatics:

    • Heat cooking oil in a wok over medium-high heat.
    • Add the sliced yellow onion, minced garlic cloves, finely chopped lemongrass stalk, grated ginger root, lemon zest, and torn kaffir lime leaves.
    • Stir-fry until fragrant, about 2-3 minutes.
  3. Cook Chicken:

    • Add the chicken breast pieces to the wok.
    • Stir-fry with the aromatics until the chicken is almost thoroughly cooked, about 5-6 minutes.
  4. Add Vegetables:

    • Incorporate the diced red bell pepper, trimmed snow peas, and drained baby corn into the wok, one by one.
    • Stir-fry briefly just to seal in the flavor of the vegetables, about 2 minutes.
  5. Sauce and Spices:

    • Pour in the plum sauce, lemon juice, and sambal oelek.
