Overview

This Thai Dessert Soup is a delightful adaptation of a traditional Thai dessert, perfect for those seeking a refreshing and light sweet treat. It’s quick to prepare, taking just 25 minutes from start to finish, making it ideal for a quick dessert fix or to impress guests with its exotic flavors.

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Serves: 4

Ingredients

  • 1/4 cup tapioca pearls
  • 1 cup water
  • 2 tablespoons sugar
  • 2 cups frozen coconut milk (or dessert tofu)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon rose water
  • Pomegranate seeds, for garnish
  • Optional: Almond jelly dessert, cubed (if not using tapioca)

Instructions

  1. Prepare Tapioca:

    • In a saucepan, bring 1 cup of water to a boil.
    • Add tapioca pearls and stir constantly until the pearls turn translucent, about 15 minutes.
  2. Sweeten Tapioca:

    • Remove the tapioca from heat and stir in 2 tablespoons of sugar.
    • Bring it back to a boil, then immediately remove from heat again. Let it cool.
  3. Prepare Coconut Milk (or Dessert Tofu):

    • In a separate bowl, stir 2 tablespoons of sugar into the frozen coconut milk until dissolved.
    • Add vanilla extract and rose water to the sweetened coconut milk. Mix well.
  4. Assemble the Dessert:

    • Select 4 chilled bowls for serving.
    • Divide the cooked tapioca pearls among the bowls.
    • Prepare your choice of fruits: slice strawberries, leave other berries whole, and dice other fruits like mango or pineapple.
  5. Combine and Chill:

    • Divide the prepared fruits among the bowls with tapioca pearls.
    • Pour the sweetened coconut milk (or dessert tofu mixture) over the fruit and tapioca pearls.
    • Chill the desserts until ready to serve.
  6. Garnish:

    • Before serving, garnish each bowl with a sprinkle of pomegranate seeds.
    • Optional: For a playful touch, consider adding pesticide-free flower petals or colored marshmallow flowers.

Notes

  • Variations: If tapioca pearls are not preferred, you can substitute with cubed almond jelly dessert or dessert tofu for a different texture.
  • Presentation: Ensure bowls are chilled for a refreshing presentation. The vibrant colors of the fruits and the exotic aroma of rose water make this dessert visually appealing.
  • Storage: This dessert is best served chilled and can be prepared ahead of time, making it convenient for entertaining.
