Instructions

Prepare the Tofu: Soak the tofu in hot water to eliminate any unpleasant odor, then drain, gently tearing the top and removing a bit of the filling. Set aside.

Make the Spice Paste: Blend or grind the curly chili peppers, red chili peppers, shallots, garlic, and bird’s eye chilies until well mixed but not too fine.

Sauté the Spice Paste: In a pan, sauté the spice paste until fragrant and cooked through. Be cautious of the spiciness—wear a mask if needed!

Cook the Filling: Add the filling ingredients (cabbage, carrots, tempe, and any other preferred veggies) to the sautéed spices, along with a little water. Cook until softened, tasting and adjusting seasoning as necessary.
