Instructions:

Step 1: Prepare the Fava Bean Pesto

  1. Begin by bringing water to a boil in a small saucepan. Add the shelled fava beans and cook them for 5 minutes. Once done, drain them and set them aside in a bowl.
  2. Transfer the cooked fava beans into a tall mixing cup or blender. Add the extra virgin olive oil, grated Pecorino Romano cheese, and a bit of the water used to cook the beans.
  3. Blend the mixture until smooth. Season the pesto with salt and black pepper to taste.

Step 2: Prepare the Belgian Endive

  1. Rinse and trim the Belgian endive. Cut it into approximately 1 cm wide slices.
  2. Place the endive in a bowl and toss with a drizzle of extra virgin olive oil. Season with salt and black pepper to taste.
