Instructions:
Step 1: Prepare the Fava Bean Pesto
- Begin by bringing water to a boil in a small saucepan. Add the shelled fava beans and cook them for 5 minutes. Once done, drain them and set them aside in a bowl.
- Transfer the cooked fava beans into a tall mixing cup or blender. Add the extra virgin olive oil, grated Pecorino Romano cheese, and a bit of the water used to cook the beans.
- Blend the mixture until smooth. Season the pesto with salt and black pepper to taste.
Step 2: Prepare the Belgian Endive
- Rinse and trim the Belgian endive. Cut it into approximately 1 cm wide slices.
- Place the endive in a bowl and toss with a drizzle of extra virgin olive oil. Season with salt and black pepper to taste.
Step 3: Assemble the Piadina
- Heat the piadine in a dry skillet for 1-2 minutes, just enough to warm them through and make them slightly crispy.
- To assemble, take each piadina and layer half of the ingredients. Start with a generous portion of the grilled Belgian endive, then add slices of prosciutto crudo.
- Top with the fava bean pesto for an added burst of flavor. Optionally, sprinkle some Pecorino Romano cheese shavings on top for extra richness.
Step 4: Serve and Enjoy
