Troccoli with Fava Bean Pesto

Pistachios 60g
Burrata cheese 50g
Lemon zest To taste
Fava beans (peeled) 150g
Pecorino Romano cheese 70g
Fresh basil 20g
Extra virgin olive oil 70g
Fresh thyme To taste
Black pepper To taste
Fine salt To taste

Instructions

  1. Prepare the Pesto:
    To start making the fava bean pesto, place the 150g of peeled fava beans into a food processor. Add the fresh thyme leaves, basil, grated Pecorino Romano cheese, extra virgin olive oil, salt, and black pepper to the beans. For a smoother consistency, pour in a little bit of water to help blend everything together.

  2. Blend into a Creamy Pesto:
    Blend the ingredients in the processor until smooth, creating a creamy pesto mixture.

  3. Toast the Pistachios:
    In a pan, toast the pistachios for about 4 minutes. Once done, allow them to cool slightly, then roughly chop them for a crunchy garnish.

  4. Cook the Troccoli:
    Bring a large pot of salted water to a boil. Add the troccoli (or any pasta you prefer) and cook until al dente according to the package instructions. Reserve a ladle of pasta water before draining.

  5. Combine Pasta with Pesto:
    While the pasta is cooking, heat the pesto in a skillet or pan. Once the pasta is drained, add it to the pan with the pesto. Stir in a ladle of pasta water to loosen the sauce, allowing it to coat the pasta evenly. Toss everything together for a minute or two over low heat.

  6. Plate the Dish:
    Transfer the troccoli to plates. Top each serving with fresh dollops of burrata cheese, a sprinkle of chopped pistachios, and a little lemon zest for a refreshing finish.
