Ingredients:

Fresh Coconut (grated) 1/4 cup
Curd (Dahi / Yogurt) 1 1/2 cups
Ghee 1/2 teaspoon (for roasting)
Salt To taste
Ghee 1 teaspoon (for seasoning)
Mustard Seeds 1/2 teaspoon

Instructions:

  1. Roasting the Spices:

    • Start by heating 1/2 teaspoon of ghee in a heavy-bottomed pan or kadai.
    • Add the methi (fenugreek) seeds and dry red chillies to the hot ghee. Roast them on medium heat until the methi seeds turn slightly brown and the chillies release a wonderful, aromatic fragrance. This should take about 5 minutes. Once roasted, transfer the spices to a plate and set aside to cool.
  2. Grinding the Mixture:

    • In a mixer grinder, combine the roasted methi seeds and dry red chillies with grated coconut, salt, and a little bit of yogurt. Blend everything together into a smooth paste. If the paste seems too thick, you can add a splash of water to help blend it smoothly.
    • Transfer the ground mixture into a serving bowl.
  3. Mixing with Yogurt:

    • Now, add the remaining yogurt (about 1 cup) to the paste. Stir the mixture well to combine the flavors. Taste and adjust the salt as needed to suit your preferences.
  4. Preparing the Seasoning (Tadka):

    • In a small tadka pan, heat 1 teaspoon of ghee over medium heat.
    • Once the ghee is hot, add the mustard seeds and let them crackle.
    • As soon as the mustard seeds start to splutter, add a few curry leaves to the pan and turn off the heat. The curry leaves will fry in the hot ghee, adding a burst of flavor.
  5. Final Mixing:

    • Pour the hot seasoning over the prepared Menthe Tambli. Stir gently to ensure the flavors are well distributed.
