Instructions
- Preheat your oven to 325ºF (165ºC) to prepare for the toasting of the almonds.
- Evenly spread the almonds across a baking sheet, placing them in the oven for about 5 to 7 minutes, stirring occasionally until they are lightly browned and aromatic. Once done, remove and allow them to cool.
- In a food processor, coarsely chop the chocolate chips by pulsing on and off, then transfer them to a medium mixing bowl.
- Using the same processor bowl, coarsely chop the cooled almonds in a similar manner and add them to the chocolate chips, tossing gently to combine the two ingredients.
- Grease a 13 x 9-inch baking pan thoroughly and spread half of the nut and chocolate mixture evenly over the bottom.
- In a heavy medium saucepan, combine the butter and brown sugar, bringing the mixture to a boil over medium heat while stirring constantly. This should take about 5 to 7 minutes.
- Continue cooking until the syrup turns a light golden brown and reaches the hard crack stage, around 300ºF (149ºC) on a candy thermometer. To check, drop a bit of syrup into a bowl of ice water; it should form hard and brittle threads.
- Carefully pour the hot syrup evenly over the nut mixture in the pan.
- Sprinkle the remaining nut mixture on top, gently smoothing and pressing it down with a spatula for even distribution.
- Refrigerate the toffee until it is completely set and the chocolate is firm, which should take approximately 1.5 hours.
