Here’s how to bring the fun and flavor of carnival-inspired cupcakes to life in your kitchen.

Ingredients

To make 12 Carnival Cupcakes, you will need the following ingredients for both the cupcake base and the frosting:

Cupcake Base:

Ingredient Quantity
Butter 120g
All-purpose flour 120g
Sugar 100g
Condensed milk 70g
Eggs 1
Baking powder 3g
Vanilla bean 1 pod
Lemon zest 1
Salt (fine) A pinch

Frosting:

Ingredient Quantity
Sugar 225g
Butter 170g
Mint syrup 50g
Cherry syrup 50g
Condensed milk 75g
Water 75ml
Heavy cream 50ml
Egg yolks 7
Gelatin sheets 10g

Instructions:

1. Preparing the Cupcake Base:

  1. Creaming the Butter and Sugar:
Begin by placing the butter and sugar in a mixing bowl. Using an electric mixer, beat the ingredients until light and fluffy. Add the egg, and continue beating until fully incorporated.

  2. Adding Dry Ingredients:
Gradually sift the all-purpose flour and baking powder into the mixture. Mix everything together until you achieve a smooth, homogeneous batter. Make sure the mixture is well combined but avoid over-mixing.

  3. Preparing the Muffin Tin:
Line a 12-cup muffin tray with cupcake liners. Transfer the batter into a piping bag, and carefully fill the cupcake liners, making sure to only fill each one about two-thirds full. This will allow room for the cupcakes to rise as they bake.

  4. Baking the Cupcakes:
Preheat the oven to 180°C (350°F). Place the tray in the center of the oven and bake for approximately 18–20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack before frosting.

2. Making the Buttercream Frosting:

  1. Creating a Syrup:
In a small saucepan, combine the water and sugar. Heat over medium heat, stirring occasionally, until the sugar completely dissolves. Insert a cooking thermometer and bring the syrup to 115°C (239°F). Remove from heat once the temperature is reached.

  2. Making the Buttercream:
In a separate bowl, beat the butter until it becomes soft and creamy. Gradually add the syrup to the butter while continuing to beat with a hand mixer. Continue beating until the mixture becomes smooth and glossy.

  3. Dividing the Frosting:
Once your buttercream is ready, divide it into three separate bowls. In the first bowl, leave the frosting white. In the second bowl, add the cherry syrup, and in the third, incorporate the mint syrup. Mix each bowl until the color is evenly distributed.

3. Assembling the Cupcakes:

  1. Filling the Cupcakes:
Once the cupcakes have cooled, use a piping bag to fill each one with a swirl of your chosen frosting. You can either mix the colors together or layer them separately for a more vibrant, colorful effect.

  2. Frosting the Cupcakes:
Using a second piping bag fitted with a wide star tip, pipe the buttercream over the top of each cupcake. Create a beautiful swirl pattern, making sure to alternate the flavors for a festive, colorful look.

  3. Chill and Serve:
Place the frosted cupcakes in the refrigerator to set for at least 30 minutes. This will help the frosting firm up and make them easier to handle. Once chilled, serve and enjoy your carnival-inspired cupcakes!

Additional Tips:

  • Gelatin Sheets: To achieve a firm frosting consistency, gelatin sheets are used to stabilize the frosting. Make sure to soak the sheets in cold water for about 5 minutes before adding them to the mixture.

  • Color Variations: Feel free to experiment with other syrups or food coloring to customize the frosting to your theme or occasion.

  • Storage: These cupcakes are best enjoyed within a day or two of making. Store them in an airtight container in the fridge to keep them fresh.
