Ingredients:

  • 20 cookies (of your choice)
  • 1/2 cup peanut butter
  • 1 cup white chocolate chips

Instructions:

  1. Prepare the Cookies:

    • Spread peanut butter onto the flat side of the cookies.
  2. Assemble the Pops:

    • Place an ice cream stick into the peanut butter on half of the cookies.
    • Top with another cookie so the stick is sandwiched between the two cookies.
  3. Melt the Chocolate:

    • Melt the white chocolate chips using a double boiler for best results. If you don’t have one, you can use a heatproof bowl suspended over a pot of simmering water. Stir often until melted and smooth.
  4. Coat the Cookie Pops:

    • Dip each cookie pop into the melted chocolate, ensuring it’s completely covered.
    • Roll the pops in red and green sprinkles while the chocolate is still warm.
    • Lay or stand the pops on waxed paper or paper plates.
  5. Chill and Decorate:

    • Place the coated pops in the refrigerator to chill until the chocolate sets.

Variations:

  • Snowmen: Use licorice whip to create headbands and position two regular-sized M&M candies as ear muffs. Decorate with black and orange gel for eyes, mouth, and nose respectively. Wrap a fruit roll-up around the bottom of the cookie at the stick for added flair.
  • Santa: Dip the top of the pop into red sprinkles to create Santa’s hat. Decorate with white icing for the beard and black gel for the eyes. Add a little extra holiday cheer with a white icing brim.
