Holiday Tramezzini (Italian Party Sandwiches)

Smoked cheese (Scamorza or Provola) 40g
Bresaola (air-dried beef) 15g
Smoked salmon 40g
Cooked ham (Prosciutto cotto) 20g
Black olive pâté 25g
Sun-dried tomatoes in oil 35g
Fresh basil leaves 2
Zucchini 1

Instructions:

  1. Prepare the sun-dried tomato pâté:
    Begin by making the sun-dried tomato pâté. Drain the sun-dried tomatoes and place them in a food processor. Pulse until they are finely chopped. Add salt and pepper to taste. Then, pour in the apple cider vinegar and blend while stirring in the same direction until you achieve a thick, smooth sauce. Divide the pâté into two separate bowls, mixing each one with a spoon to incorporate the flavors.

  2. Prepare the zucchini:
    Wash and trim the zucchini. Slice it into thin strips, about 2 mm in thickness, lengthwise.

  3. Assemble the sandwiches:
    Lay the slices of bread flat on a cutting board. For variety, spread different toppings on each slice of bread: curry-flavored mayonnaise, classic mayonnaise, sun-dried tomato pâté, black olive pâté, spreadable cheese, and goat cheese. You can also spread some of these creamy fillings on the bread slices you will use to close the sandwiches.

  4. Layer the fillings:
    Slice the mozzarella cheese into thin rounds. For added flavor and texture, place thin slices of bresaola, smoked salmon, and cooked ham on top of the spreadable fillings.

  5. Assemble the tramezzini:
    After adding the fillings, close the sandwiches by placing another slice of bread on top. You can gently press them together to ensure they hold their shape.

  6. Optional finishing touches:
    If desired, garnish with a few fresh basil leaves and thin slices of zucchini for extra freshness and color.
