Ingredients:
- 8 cups coarse salt
- 1 cup granulated sugar
- 1 cup confectioners’ sugar
- 1 cup sugar
- 11 ounces almond paste
- 13 ounces bittersweet chocolate
- 2 cups heavy cream
Instructions:
Step | Description |
---|---|
1 | Preheat your oven to 200 degrees F. |
2 | In the bowl of an electric mixer fitted with the whisk attachment, whisk together egg whites and salt, gradually adding 1/4 cup of granulated sugar. Continue whisking until stiff peaks form. |
3 | Gently fold in the remaining granulated sugar and confectioners’ sugar until well combined. |
4 | Transfer the meringue to a large pastry bag fitted with a 3/4-inch round tip. |
5 | On a parchment-lined baking sheet, pipe a 3-inch mound of meringue to form the snowman’s body. |
6 | Pipe another mound in a “c-shape” on top of the body to form the arms, and a smaller mound in the center to form the head. Repeat to create 7 more snowmen. |
7 | Sprinkle the snowmen with pearl sugar for added sparkle. |
8 | In a small bowl, combine the remaining meringue with a few drops of red food coloring. Transfer to a parchment cone or small pastry bag fitted with a #2 tip, and pipe a red nose onto each snowman. |
9 | Bake the snowmen for about 30 minutes, or until the outside is set but the inside is still soft. |
10 | Remove from the oven and allow to cool. Once cool, remove the soft inside of each snowman with a spoon and discard. |
11 | Return the snowmen to the oven and bake for an additional 1 to 1 1/2 hours, until firm. Be careful not to let them color. |
12 | While the snowmen are baking, roll out 7 ounces of almond paste to a 1/2-inch thickness. Using a 3/4-inch cutter, cut out 8 circles. Dip each circle into melted chocolate and transfer to a parchment-lined baking sheet. Swirl the chocolate to form the border of a hat. Repeat with the remaining circles and allow to cool completely. |
13 | Reserve 1/4 cup of chocolate for decorating. |
14 | In a large bowl, combine the remaining chocolate with the heavy cream to make chocolate mousse. Transfer the mousse to a large pastry bag fitted with a 3/4-inch round tip, and pipe into the cooled snowmen. |
15 | Add a few drops of red food coloring to the remaining 4 ounces of almond paste and knead until combined. Roll out to 1/8-inch thickness and cut into 8 (8 by 1/2-inch) strips to form scarves. |
16 | Place the scarves around the snowmen’s necks and top each with a cooled hat. |
17 | Transfer the reserved chocolate to a small parchment cone or pastry bag fitted with a #1 tip, and use it to pipe eyes, mouths, and buttons onto each snowman. |
18 | Serve immediately and enjoy the sweet whimsy of your homemade Meringue Snowmen! |
