Prepare the Shortcrust Dough
Begin by preparing the hazelnut shortcrust dough. In a large mixing bowl, add the softened butter and muscovado sugar. Mix together until the ingredients form a smooth and creamy consistency.
Add the egg and continue mixing until incorporated. -
Combine the Flours
Gradually add the all-purpose flour and hazelnut flour to the mixture. Stir with a spoon until the flour is fully incorporated and a dough starts to form. -
Shape the Dough
Transfer the dough to a lightly floured surface and knead it until it’s smooth and elastic. Shape the dough into a ball, then wrap it in plastic wrap. Let it rest in the fridge for about 30 minutes to allow the flavors to meld. -
Roll out the Dough
After the resting period, take the dough out of the fridge. Roll it out with a rolling pin to a thickness of about 5-6 mm, which will be enough to cover a 28 cm tart pan.
Gently roll the dough onto the rolling pin, then unroll it into the tart pan. Press the dough into the bottom and sides of the pan, trimming off any excess dough (save this excess dough for decoration). -
Prepare the Pastry Cream
In a saucepan, combine the whole milk, fresh cream, and vanilla bean (split open and scraped). Heat the mixture over medium heat, bringing it just to a boil.
Meanwhile, in a separate bowl, whisk together the egg yolks and granulated sugar until well combined. Add the potato starch and continue to whisk until smooth and thick. -
Temper the Egg Mixture
Once the milk and cream mixture has heated, remove it from the heat and discard the vanilla bean pod. Slowly pour a ladle of hot milk into the egg mixture to temper it, stirring constantly.
Gradually add the rest of the milk mixture back into the bowl with the egg yolk mixture, whisking until fully combined. -
Cook the Pastry Cream
Pour the mixture back into the saucepan and cook over medium heat, stirring constantly with a spatula, until the cream thickens and becomes smooth and velvety.
Once thickened, remove the saucepan from the heat and immediately pour the cream into the prepared tart crust. Use a spatula to smooth and level the cream. -
Bake the Tart
Preheat your oven to 180°C (350°F) and bake the tart for approximately 30 minutes, or until the crust is golden and the cream has set. -
Decorate with Christmas Biscuits
While the tart is baking, gather the leftover dough and roll it out to about 5 mm thick. Use Christmas-themed cookie cutters (such as Christmas trees or stars) to cut out festive shapes.
Place the biscuits on a baking sheet lined with parchment paper and bake them in the preheated oven for 15 minutes, or until golden brown. Once done, let them cool before decorating. -
Final Decoration
Once the tart has cooled, spread Nutella® evenly on top of the pastry cream using a spatula.
Decorate the tart with fresh red currants and place the homemade Christmas biscuits on top for a festive touch.
