Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large bowl, beat the eggs on high speed for 5 minutes until light and fluffy.
  3. Gradually beat in 1 cup of sugar until well combined.
  4. Stir in the canned pumpkin and lemon juice until smooth.
  5. In a separate bowl, combine the flour, baking powder, cinnamon, ginger, nutmeg, and salt.
