📋 Instructions:

  1. Lightly spoon flour into a measuring cup; level off. In a large bowl, combine 1 1/2 cups of flour, sugar, salt, nutmeg, and yeast; blend well.

  2. In a small saucepan, heat milk, water, and margarine to a very warm temperature (120 to 130°F).

  3. Add the warm liquid and eggs to the flour mixture. Blend at low speed until moistened; beat for 3 minutes at medium speed.

  4. By hand, stir in enough flour to make a stiff dough.

  5. Cover the dough tightly and refrigerate overnight. You can use this dough to create a Fanned Prune Coffee Cake, Apricot Wreath Coffee Cake, or any other holiday coffee cake.

APRICOT WREATH COFFEE CAKE:

  1. In a small saucepan, combine apricots and water. Cook over medium heat until water is absorbed and apricots are soft, about 20-25 minutes. Add brown sugar, orange juice, and nuts; cool.

  2. Grease 2 cookie sheets.

  3. Turn the dough onto a lightly floured surface and divide it into 2 parts.

  4. Roll out half of the dough to an 18×12 inch rectangle and spread half of the filling.

  5. Starting at the 18-inch side, roll up jelly-roll style, pinching the edges to seal.

  6. Place seam-side-down on the prepared cookie sheet, twist into a circle, join ends, and pinch to seal.

  7. Make cuts about three-fourths of the way through the dough, 1 inch apart. Repeat with the remaining dough.

  8. Cover and let rise in a warm place until light and doubled in size, about 30-40 minutes.

  9. Heat the oven to 375°F and bake for 20-25 minutes or until golden brown.

  10. Remove from the pan immediately and let it cool. If desired, combine powdered sugar and milk, then drizzle over the warm loaf.

FANNED PRUNE COFFEE CAKE:

  1. In a medium saucepan, combine prunes, sugar, and lemon juice; bring to a boil. Boil for 1 minute, stirring occasionally; cool.

  2. Grease 2 cookie sheets.

  3. Turn the dough onto a lightly floured surface and divide it into 2 parts.

  4. Roll out half of the dough to an 18×9 inch rectangle. Spread half of the prepared filling lengthwise down two-thirds of the dough.

  5. Fold unspread dough over half of the spread dough. Fold again, forming 3 layers of dough and 2 layers of filling. Seal edges well.

  6. Place on the prepared cookie sheet. Using scissors or a sharp knife, make eight cuts, 1 inch apart, to within 1 inch of the opposite side. Separate strips slightly and twist so the filling shows.

  7. Repeat with the remaining dough.

  8. Cover and let rise in a warm place until light and doubled in size, about 30-40 minutes.

  9. Heat the oven to 375°F and bake for 15-25 minutes or until golden brown.

  10. Meanwhile, in a small bowl, combine honey and margarine. Brush the mixture over the hot loaf to glaze. Serve warm.
