Instructions:

  1. Prepare the Dough:

    • Sift the dry ingredients (except sugars) into a mixing bowl and whisk to combine.
    • Beat the butter and sugars until creamy, then add eggs one at a time, beating well after each addition.
    • Gradually beat in half of the flour mixture, then mix in the molasses, followed by the remaining flour mixture, until just combined.
    • Divide the dough into pieces and press each between sheets of plastic wrap into rectangles slightly over 1/4 inch thick. Chill for at least 1 hour.
  2. Preheat and Roll:

    • Preheat your oven to 350°F (175°C).
    • Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
    • Cut into desired shapes using floured cookie cutters and place them on baking sheets lined with parchment paper, leaving space between each.
  3. Bake:

    • Bake the cookies for 8-10 minutes until firm to the touch. They should be lightly browned around the edges and slightly puffed.
    • Cool the cookies on the baking sheets for a few minutes, then transfer to wire racks to cool completely.
  4. Prepare the Icing:

    • In a mixing bowl, combine confectioners’ sugar and egg whites, beating until smooth.
    • Add lemon juice or vinegar and continue beating until the icing is fluffy.
    • Divide the icing into bowls and add desired food coloring. Keep covered with plastic wrap to prevent drying.
  5. Decorate:

    • Use a pastry bag or spread icing onto cooled cookies.
    • Add decorative sweet bits such as raisins or currants for extra garnish.
    • If hanging cookies, make a small hole near the top of each cookie while still warm.

Variations:

  • Sandwich Cookies: Cut round cookies and sandwich them with heated apricot jam for a delicious twist.
  • Custom Decorations: Get creative with icing colors and decorations to suit any occasion or theme.

These Gingerbread Cookies are not only a treat for the taste buds but also a delightful activity for the whole family to enjoy together. Whether you’re baking for a holiday gathering or simply craving a sweet indulgence, these cookies are sure to delight! 🎄
