Description:
These delightful jam-filled Christmas cookies are a timeless favorite, perfect for holiday gatherings or as a sweet treat any time of the year. Unlike traditional recipes that call for rolling in beaten egg white, this version simplifies the process without sacrificing flavor. Originally discovered in a Norene Gilletz cookbook from the 1980s, these cookies boast a delectable combination of walnut pieces, all-purpose flour, butter, margarine, icing sugar, and egg. They not only taste heavenly but also add a festive touch to any cookie tray.

Ingredients:

  • 3/4 cup walnut pieces
  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter
  • 1/2 cup margarine
  • 1/2 cup icing sugar
  • 1 egg
  • 1/2 teaspoon almond extract
  • Jam (preferably seedless raspberry or strawberry)

Instructions:

Step Description
1 Preheat your oven to 350°F (175°C) and line cookie sheets with parchment paper. Set aside.
2 In a food processor fitted with a steel blade, combine the walnut pieces and 1/4 cup of flour. Process until the nuts are finely chopped, then transfer the mixture to a separate dish and set aside.
3 Add the remaining flour, butter, and icing sugar to the food processor. Process until the mixture reaches a crumbly texture, approximately 10 seconds.
4 Return the nut mixture to the food processor, along with the almond extract and egg. Process until the entire mixture is well combined, about 15 seconds.
5 Shape the dough into one-inch balls and place them on the prepared cookie sheet. Using the end of a wooden spoon, make an indentation in the center of each cookie.
6 Fill each indentation with a small amount of jam. Seedless raspberry or strawberry jam are recommended for their festive colors, but feel free to use your favorite flavor.
7 Bake the cookies in the preheated oven for 15 to 18 minutes, or until they turn golden brown.
8 Once baked, allow the cookies to cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy these delicious jam-filled Christmas cookies with friends and family!

These cookies are sure to become a holiday tradition in your home, cherished for their simplicity and irresistible flavor. Whether you’re baking for a festive occasion or simply indulging your sweet tooth, these jam-filled treats are guaranteed to delight. So put on your apron, preheat your oven, and let the aroma of freshly baked cookies fill your kitchen with warmth and joy!
