Instructions:

  1. Preheat Oven: Begin by preheating your oven to 375°F (190°C).

  2. Prepare Ramekins: Butter 8 ramekins generously with butter, making sure to coat them well with breadcrumbs. Tap out any excess breadcrumbs and set aside.

  3. Make the Roux: In a medium saucepan, melt the butter over moderate heat. Whisk in the all-purpose flour to create a smooth roux. Cook the roux, whisking constantly, for about 3 minutes.

  4. Add Milk: Gradually pour in the milk while whisking continuously. Allow the mixture to come to a gentle boil, then remove it from the heat.

  5. Prepare Cheese Mixture: In a large bowl, combine 3/4 cup of crumbled feta cheese with the milk mixture. Add in the egg yolks, sun-dried tomatoes, fresh dill, and season with salt and pepper to taste. Remember, feta cheese is already salty, so go easy on the salt!

  6. Whip Egg Whites: In a separate bowl, beat the egg whites until they form stiff peaks.

  7. Combine Mixtures: Gently fold half of the whipped egg whites into the cheese mixture to lighten it. Then, carefully fold in the remaining egg whites until everything is well combined.

  8. Assemble Soufflés: Fill each prepared ramekin halfway with the soufflé mixture. Sprinkle some more crumbled feta cheese on top of each, then fill the ramekins with the remaining soufflé mixture. Finish off by sprinkling the tops with the reserved breadcrumbs.

  9. Bake: Place the filled ramekins in a large baking pan. Pour hot water into the pan, being careful not to get any water into the soufflés. The water should reach halfway up the sides of the ramekins. Bake in the middle of the preheated oven until the soufflés are golden-brown, about 25 minutes.

  10. Rest and Reheat: Once baked, remove the ramekins from the oven and let them rest in the pan for 15 minutes. After this initial bake, the soufflés can be prepared up to 1 ½ hours in advance. You can either keep them at room temperature or cover them with plastic wrap and refrigerate for up to 6 hours. Just make sure to bring them back to room temperature before continuing.

  11. Final Bake: When you’re ready to serve, preheat your oven to 425°F (220°C). Place the soufflés back in the oven and bake until they are puffed up and beautifully golden-brown, about 5-7 minutes.

  12. Prepare Salad: While the soufflés are baking, divide your favorite salad greens among 8 plates.

  13. Serve: Once the soufflés are ready, place one on top of each plate of greens. Serve immediately and enjoy this delightful combination of fluffy soufflé and crisp salad!

This Feta Cheese Soufflés with Salad recipe is perfect for brunches, Christmas gatherings, or any occasion where you want to impress your guests with a taste of Greek and European flavors. 😍 The soufflés are light, airy, and bursting with the tangy goodness of feta cheese, while the salad provides a refreshing contrast of textures and flavors. 🥗🧀 So, whether you’re starting your meal with these soufflés or ending it on a high note, it’s sure to be a hit at your table! 💫
