Servings: 4 Tartlets

Ingredients:

Quantity Ingredient
1 Premade puff pastry
1 Red onion
1 Garlic clove
3-5 Mushrooms
0.5 Feta cheese
6 Cherry tomatoes
8 Black olives
Extra virgin olive oil

Instructions:

  1. Prepare the Dishes:

    • You will need a small, shallow, circular oven-proof dish for each diner.
  2. Prep the Pastry:

    • Roll out the pastry (or buy ready-rolled sheets) and cut out circles just larger than the oven-proof dishes.
  3. Sauté the Onions and Mushrooms:

    • Meanwhile, heat the oil in a saucepan and sauté the onions until they just start to caramelize, then add the mushrooms and garlic.
    • Cook for 2 or 3 minutes until the mushrooms are cooked through, then remove the pan from the heat.
  4. Preheat the Oven:

    • Lightly oil the oven-proof dishes and preheat the oven to 200°C (392°F).
  5. Layer the Ingredients:

    • Place some of the onion-mushroom mixture in each dish and scatter with the crumbled feta, halved cherry tomatoes, and halved black olives.
  6. Assemble the Tartlets:

    • Place the pastry on top, tucking the edges down the sides of the dishes.
    • Brush the pastry with milk or beaten egg for a golden finish.
  7. Bake:

    • Bake in the preheated oven for 20 minutes until the pastry is well risen and golden brown.
  8. Serve:

    • To serve, run a sharp knife around the edge of the pastry to loosen it.
    • Place a plate on top of the dish and quickly turn it over.
    • Carefully remove the dish (it’s hot!) so that the pastry top now becomes the tart bottom.
  9. Finish with Flair:

    • Add a few drops of balsamic vinegar to each tartlet just before serving for an extra burst of flavor.

Enjoy this delicious Savoury Tarte Tatin as a delightful lunch or snack option that’s sure to impress! 🍅🧀🫒
