3 | Garlic cloves |
1 | Cup catsup |
1/2 | Cup apricot preserves |
1/2 | Cup cider vinegar |
1/4 | Habanero pepper |
1 | Scotch bonnet pepper |
1 | Tablespoon chili powder |
1/2 | Teaspoon ground cumin |
1/4 | Teaspoon salt |
Instructions:
-
Prepare the Ribs:
- Trim excess fat from the short ribs, ensuring they are clean and ready for cooking.
-
Simmer the Ribs:
- Place the ribs in a 4 to 6 quart pot, covering them with enough water.
- Bring the water to a boil, then reduce the heat to a simmer.
- Cover and cook for approximately 1 1/2 hours, or until the ribs are tender.
- Drain the ribs once cooked.
-
Prepare the Sauce:
- In a small saucepan, sautรฉ the diced onion and minced garlic in a bit of oil until tender.
- Stir in the catsup, apricot preserves, cider vinegar, chopped habanero and Scotch bonnet peppers, steak sauce, and chili powder.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer, uncovered, for about 10 minutes until slightly thickened. Set aside.
-
Season the Ribs:
- In a small bowl, combine the ground cumin and salt.
- Sprinkle this mixture evenly over both sides of the ribs, gently rubbing it into the surface for maximum flavor infusion.
-
Grill or Broil the Ribs:
- Preheat your grill or broiler.
- For grilling: Set up for indirect grilling and test for medium heat above the drip pan.
- For broiling: Set the broiler pan about 6 inches from the heat source.
- Place the ribs, meaty side up, on a lightly oiled grill rack or broiler pan.
- Cover and grill for approximately 15 minutes, or until the ribs are tender, brushing occasionally with the prepared sauce.
- If broiling, cook for about 15-20 minutes, brushing with sauce intermittently.
-
Serve:
- Heat the remaining sauce until bubbly.
- Pass the heated sauce alongside the grilled or broiled ribs, allowing everyone to drizzle extra sauce over their portions as desired.
