Instructions:

  1. Prepare the Ribs:

    • Trim excess fat from the short ribs, ensuring they are clean and ready for cooking.
  2. Simmer the Ribs:

    • Place the ribs in a 4 to 6 quart pot, covering them with enough water.
    • Bring the water to a boil, then reduce the heat to a simmer.
    • Cover and cook for approximately 1 1/2 hours, or until the ribs are tender.
    • Drain the ribs once cooked.
  3. Prepare the Sauce:

    • In a small saucepan, sautรฉ the diced onion and minced garlic in a bit of oil until tender.
    • Stir in the catsup, apricot preserves, cider vinegar, chopped habanero and Scotch bonnet peppers, steak sauce, and chili powder.
    • Bring the mixture to a gentle boil, then reduce the heat and let it simmer, uncovered, for about 10 minutes until slightly thickened. Set aside.
  4. Season the Ribs:

    • In a small bowl, combine the ground cumin and salt.
    • Sprinkle this mixture evenly over both sides of the ribs, gently rubbing it into the surface for maximum flavor infusion.
  5. Grill or Broil the Ribs:

    • Preheat your grill or broiler.
    • For grilling: Set up for indirect grilling and test for medium heat above the drip pan.
    • For broiling: Set the broiler pan about 6 inches from the heat source.
    • Place the ribs, meaty side up, on a lightly oiled grill rack or broiler pan.
    • Cover and grill for approximately 15 minutes, or until the ribs are tender, brushing occasionally with the prepared sauce.
    • If broiling, cook for about 15-20 minutes, brushing with sauce intermittently.
