Spicy Chicken Recipe

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • Flour seasoning for fried chicken (for coating)
  • 4 cloves garlic
  • 15 small red chilies
  • 2 tablespoons Del Monte BBQ sauce
  • 1 tablespoon oyster sauce
  • Salt, sugar, and Royco seasoning to taste
  • Water, as needed
  • Optional: a splash of soy sauce

Instructions:

  1. Prepare the Chicken: Coat the chicken pieces with flour seasoning, similar to how you would prepare for fried chicken. Set aside.

  2. Make the Spice Blend: In a blender, combine the garlic and small red chilies. Blend until you have a smooth paste.

  3. Cook the Spices: Heat oil in a pan over medium heat. Add the blended garlic and chili mixture to the pan. Sauté until fragrant and the oil starts to separate from the paste.

  4. Add Sauces: Stir in the Del Monte BBQ sauce and oyster sauce. Add a small amount of water to help the sauces combine and to adjust the consistency.

  5. Season the Sauce: Season with salt, sugar, and Royco seasoning to taste. You can also add a splash of soy sauce if desired, but this is optional.

  6. Simmer: Allow the mixture to cook until the water evaporates and the sauce thickens slightly, stirring occasionally to ensure the spices do not stick to the pan.

  7. Add the Chicken: Once the sauce is thickened, add the flour-coated chicken pieces to the pan. Stir well to coat the chicken with the sauce.

  8. Finish and Serve: Continue cooking until the chicken is thoroughly cooked and the sauce is well absorbed. Turn off the heat and transfer the chicken to a serving dish.
