Ingredients:
- 1/4 lb beef stew meat
- 1 1/2 lb potatoes
- 4 tbsp flour
- 1/3 cup Cajun seasoning
- 1 can diced tomatoes
- 1 bell pepper
- 1 onion
Instructions:
Step | Description |

1 | Pour marinade over meat in a plastic food storage bag or dish; coat beef and let stand for 15 minutes. |
2 | Spray the inside of a 4 to 5 qt crockpot with cooking spray. |
3 | Place potatoes in the crockpot. |
4 | Mix flour and Cajun seasonings; toss with beef and marinade, coating well. |
5 | Place beef and marinade on top of the potatoes. |
6 | Add the diced tomatoes. |
7 | Cover and cook on low setting for 7 to 8 hours or until beef is done. |
8 | Stir in bell peppers and onions. |
9 | Cover and cook on low setting for an additional 30 minutes or until vegetables are tender. |
