Instructions:

Preheat oven to 200ยฐC (390ยฐF).

Prepare the Pastry:
- Cut each pastry sheet in half.

Prepare the Filling:
- In a large mixing bowl, combine the pork mince, chopped coriander, chilli sauce, finely chopped red chile, grated ginger, breadcrumbs, beaten egg, soy sauce, chopped spring onions, and minced garlic until well combined.

Shape the Rolls:
- Divide the mixture into 8 portions and roll each portion into a sausage shape.

Assemble the Rolls:
- Place each sausage-shaped portion along the center of each pastry sheet.
- Roll the pastry to enclose the filling, ensuring the seam is underneath.

- Cut each roll into 4 smaller sausage rolls.
- Place them on a greased and lined baking tray, leaving space between each roll.
