Super Spicy Ayam Geprek
Ingredients:
- 1/2 kg chicken (cut into 8 pieces, preferably thighs)
- 3 cloves garlic, crushed and finely chopped
- 2 packets Kobe seasoning flour (I use Kobe Kentucky Super Crispy)
- 4 tablespoons rice flour
- 1/2 teaspoon ground black pepper
- 1 large egg
- Juice of 1 lime
- Cooking oil for frying
For the Sambal:
- 1 clove garlic
- 25 bird’s eye chilies (adjust to taste for less heat)
- Salt, to taste
Instructions:

Prepare the Chicken:
- Cut the chicken into 8 pieces. I recommend using chicken thighs for better flavor and texture.
- Clean the chicken thoroughly and squeeze lime juice over it. Let it marinate for about 15 minutes.
- Rinse the chicken again to remove any residual lime juice.

Pre-cook the Chicken:
- Boil the chicken pieces in a pot of boiling water for 5-10 minutes, or until no blood remains. Remove the chicken, drain, and discard the water.

Prepare the Coating:
- In a bowl, mix together the Kobe seasoning flour, rice flour, and ground black pepper.

Coat the Chicken:
- Beat the egg in a separate bowl and stir in the finely chopped garlic.
- Dip each chicken piece into the egg mixture, ensuring it’s well-coated. Then, dredge the chicken in the flour mixture, pressing it in to coat thoroughly.
- For a crispier coating, repeat the process: dip the chicken back into the egg mixture and coat again with the flour mixture.

Fry the Chicken:
- Heat cooking oil in a pan over medium heat. Fry the chicken pieces until golden brown and cooked through, turning them occasionally for even cooking.
- Once done, remove from oil and drain on paper towels.

Prepare the Sambal:
- Crush the garlic and bird’s eye chilies together with salt in a mortar and pestle until coarse.

Combine and Serve:
- Place each fried chicken piece onto a mortar containing the sambal, and lightly pound the chicken to mix it with the sambal.
- Ensure all the chicken pieces are well-coated with the sambal.

Final Touches:
- Serve the ayam geprek immediately with plenty of hot steamed white rice.
