  • 4 slices red onions
  • 1/4 cup chopped cilantro
  • 4 slices Monterey Jack pepper cheese
  • 4 sandwich rolls

Instructions:

  1. Marinate the Chicken:

    • Pound the chicken breasts to 1/4-inch thickness.
    • In a resealable ziplock bag, combine 1 tbsp olive oil and 1 tbsp lime juice.
    • Add the chicken breasts to the bag and marinate for 4-6 hours in the refrigerator.
  2. Prepare the Spicy Mayo:
