Big John’s Truly HOT Wings

Description: 🔥 Time consuming, but worth it. NOTE: This is not for the “Tobasco sauce is hot” or “I’ve eaten whole jalapenos” crowd, It’s for the lover of the very hot. Consume at your own risk. Aside from the high Scoville rating of the sauce, the fat and cholesterol content of this tasty treat may well kill you. Update your will prior to eating. Fire Extinguisher (optional)

Ingredients:

Quantity Ingredient
5 Chicken wings
4 cups Water
1 tsp MSG
2 tsp White pepper
1 tsp Salt
1 habanero pepper, minced
1/2 tsp Liquid smoke flavoring
1 1/4 cups Chili sauce
1/4 cup Butter
1/4 cup Garlic, minced
3 sprigs Thyme, chopped
1 habanero pepper, whole
2 tsp Chili powder
1/2 tsp Paprika
2 tsp Black pepper
1 cup Mayonnaise
1 cup Sour cream
1/2 cup Blue cheese, crumbled
1/2 cup Milk
1 tsp Onion powder
1/2 tsp Black pepper

Instructions:

  1. Preparation: Begin by cleaning and separating the chicken wings, ensuring to remove any stray feathers and excess fat/skin. Rinse the wings in cold water thoroughly.

  2. Marinade: In a large bowl, combine water, MSG, white pepper, salt, minced habanero pepper, and liquid smoke flavoring. Add the chicken wings to the marinade, cover, and refrigerate for a minimum of 2 hours.

  3. Sauce Preparation: In a medium-sized saucepan, combine chili sauce, butter, minced garlic, whole habanero pepper, chili powder, paprika, and black pepper. Heat over medium heat until the butter melts. Stir continuously and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes. Allow the sauce to cool, then cover and refrigerate.

  4. Dip Preparation: In a separate bowl, mix together mayonnaise, sour cream, crumbled blue cheese, milk, onion powder, and black pepper. Ensure thorough mixing, then cover and refrigerate the dip.

  5. Cooking the Wings: After marinating, remove the wings from the refrigerator, drain excess marinade, and pat dry with paper towels. Heat a deep fryer to 180°C (350°F). Fry the wings until the skin is golden brown and crisp. Remove from the fryer and drain on paper towels, allowing them to cool slightly.

  6. Final Touch: Preheat the oven to 350°F. In a large bowl, toss the cooked wings with the prepared sauce until they are evenly coated. Place the sauced wings on a baking sheet in a single layer and bake in the preheated oven for 15 minutes, or until the wings have dried somewhat.

  7. Serve: Remove the wings from the oven and serve immediately, accompanied by the prepared dip. Enjoy the fiery deliciousness of Big John’s Truly HOT Wings, but remember, consume at your own risk! 🌶️🔥🍗
