Spicy Ayam Rica Balado
Ingredients:
- 1/2 kg chicken feet, head, and wings
- 5 shallots
- 3 cloves garlic
- 1 piece of galangal
- 1 piece of turmeric
- 3 large red chilies
- 15 bird’s eye chilies
- 1 tomato
- 1 onion
- Salt, sugar, and seasoning to taste
- Ground black pepper to taste
- Soy sauce to taste
- 2 bay leaves
- 2 kaffir lime leaves
- Oil for sautéing
- Water as needed
- Sliced green onions for garnish
Instructions:

Prepare the Chicken:
- Wash the chicken feet, head, and wings thoroughly. Add a pinch of salt and bay leaves. Boil until tender. Once cooked, discard the water and drain the chicken.

Prepare the Spice Paste:
- Blend or grind the shallots, garlic, galangal, turmeric, red chilies, and bird’s eye chilies into a smooth paste, leaving out the bay leaves and onion.

Sauté the Aromatics:
- Heat a little oil in a pan. Sauté the sliced onion until it becomes translucent. Add the spice paste and cook until fragrant and well-cooked.

Season and Simmer:
- Add salt, sugar, ground black pepper, soy sauce, and seasoning to the pan. Stir well, then add the chicken. Mix briefly, then pour in enough water to cover the chicken.

Cook the Chicken:
- Simmer until the sauce thickens and the water reduces. Taste and adjust seasoning as needed. Once the sauce is thick and the chicken is well-coated, add the sliced green onions.

Serve:
- Garnish with additional sliced green onions if desired. Enjoy your Spicy Ayam Rica Balado with steamed rice or as a flavorful accompaniment to your meal.
