Spicy Ayam Rica-Rica Recipe
Ingredients:

Chicken:
- 1 whole chicken, cut into pieces

Spice Paste:
- 5 red chili peppers
- 20 bird’s eye chili peppers
- 5 cloves garlic
- 7 shallots
- 3 candlenuts
- 1 sachet ground white pepper
- 1 sachet ground coriander
- Palm sugar to taste
- Sweet soy sauce to taste
- Salt to taste
- Seasoning powder to taste
- 1 piece turmeric, approximately 2 inches
- 1 piece ginger, approximately 2 inches
- 1 large piece galangal, approximately 2 inches
- 2 stalks lemongrass
- 3 bay leaves
- 2 kaffir lime leaves

- Cooking oil as needed
- Water as needed
Instructions:

Prepare the Chicken:
- Cut the whole chicken into pieces, wash thoroughly, and drain well.

Prepare the Spice Paste:
- Blend the red chili peppers, bird’s eye chili peppers, shallots, garlic, candlenuts, and turmeric into a smooth paste.

Prepare the Aromatics:
- Crush the ginger, galangal, lemongrass, and palm sugar.

Cooking the Spice Paste:
- In a large pan, heat some cooking oil over medium heat.
- Add the blended spice paste and sauté until fragrant.
- Add the bay leaves, kaffir lime leaves, and the crushed ginger, galangal, and lemongrass (excluding the palm sugar).

Cooking the Chicken:
- Add the chicken pieces to the pan and stir well to coat the chicken with the spice mixture.
- Pour in enough water to partially cover the chicken and simmer for about 10 minutes.

Seasoning:
- Add the ground white pepper, ground coriander, palm sugar, sweet soy sauce, salt, and seasoning powder.
- Stir well to combine all the ingredients.

Simmering:
- Continue to simmer the chicken for another 20 minutes, allowing the flavors to meld and the chicken to cook through.

Final Touches:
- Taste the dish and adjust the seasoning if necessary.
- Once the chicken is tender and the sauce has thickened, remove from heat.
