Spicy Balado Tuna
Ingredients
- 1 large tuna (tongkol), cleaned and cut into pieces
- 3 teaspoons sugar
- 1 teaspoon salt
- Water, as needed
- 1 lime
- 4 kaffir lime leaves
Spice Paste:
- 5 large red chilies
- 15 small curly chilies
- 1 thumb-sized piece of galangal
- 2 thumb-sized pieces of turmeric
- 1 thumb-sized piece of ginger
- 10 shallots
- 3 cloves garlic
Instructions
-
Marinate the Tuna:
- Squeeze the lime over the tuna pieces, ensuring each piece is well-coated. Let it marinate for 5-10 minutes. This step helps to remove any fishy odor and adds a hint of citrusy flavor.
-
Prepare the Spice Paste:
- Blend all the spice paste ingredients (red chilies, curly chilies, galangal, turmeric, ginger, shallots, and garlic) until smooth. Add a little water if needed to help the blending process.
-
Cook the Spice Paste:
- Heat a little oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil starts to separate from the paste. This should take about 5-7 minutes.
- Add the kaffir lime leaves and continue to stir until they are wilted and aromatic.
-
Cook the Tuna:
- Add the marinated tuna pieces to the pan. Allow them to sear slightly and change color.
- Season with salt and sugar, adjusting to taste. Stir well to ensure the tuna is evenly coated with the spice paste.
- Add a little water to the pan to help cook the tuna. Cover and let it simmer for 10-15 minutes until the water has reduced and the tuna is fully cooked.
-
Serve:
- Once the tuna is cooked through and the sauce has thickened, remove from heat. Your Spicy Balado Tuna is now ready to be served. Enjoy it with steamed rice for a truly delightful meal!
