Spicy Beef Liver with Potatoes

Ingredients:

  • 1/2 kg beef liver, sliced thin
  • 1/2 kg potatoes, sliced
  • 3 shallots
  • 3 cloves of garlic
  • 7 curly red chilies
  • 1/2 ounce bird’s eye chilies
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • MSG to taste
  • Sweet soy sauce to taste
  • 2 stalks lemongrass, bruised
  • 3 bay leaves
  • 5 kaffir lime leaves
  • 1-inch piece of ginger, bruised
  • Turmeric powder as needed
  • Cooking oil for sautéing

Steps:

  1. Prepare Ingredients: Slice the beef liver and potatoes thinly and set them aside. Crush the shallots, garlic, and chilies into a fine paste. Bruise the ginger and lemongrass and set them aside.

  2. Sauté Aromatics: Heat 3 tablespoons of cooking oil in a pan. Sauté the chili paste along with the bay leaves, kaffir lime leaves, ginger, and lemongrass until fragrant. Add turmeric powder and mix well.

  3. Cook Beef Liver: Add the sliced beef liver to the pan and stir until evenly coated with the spice mixture. Pour in 1 cup of water, cover, and let it boil.

  4. Add Potatoes: Once the mixture comes to a boil, add the sliced potatoes, salt, sugar, and MSG. Stir well, cover the pan again, and cook until the potatoes are tender.

  5. Finish with Soy Sauce: Add sweet soy sauce to taste, mix well, and adjust seasoning if needed. Once the flavors are well blended, turn off the heat and let it cool slightly.

  6. Serve: Your Spicy Beef Liver with Potatoes is ready to be served with steamed white rice.
