Spicy Shredded Tuna (Tongkol Suir Pedas)

Ingredients:

  • 2 medium-sized tuna (tongkol) fillets
  • 4 cloves garlic
  • 5 shallots
  • 7 large bird’s eye chilies (cabe rawit besar)
  • 1-inch piece of turmeric root (kunyit)
  • 1-inch piece of ginger (jahe)
  • 2 kaffir lime leaves (daun jeruk)
  • Sugar, to taste
  • Salt, to taste
  • Bouillon powder, to taste
  • Cooking oil

Instructions:

  1. Prepare the Tuna:

    • Begin by frying the tuna fillets until they are fully cooked and have a crispy exterior. Once done, shred the tuna into bite-sized pieces and set aside.
  2. Make the Spice Paste:

    • In a blender or food processor, blend together the garlic, shallots, bird’s eye chilies, and turmeric root until you achieve a smooth paste. Leave the ginger and kaffir lime leaves aside for now.
  3. Cook the Spice Paste:

    • Heat a small amount of oil in a pan over medium heat. Add the blended spice paste and sauté until it changes color and becomes fragrant.
  4. Add Remaining Ingredients:

    • Once the spice paste is cooked, add the ginger and kaffir lime leaves to the pan. Continue to cook for a few more minutes, allowing the flavors to meld together.
  5. Season the Dish:

    • Season the mixture with salt, sugar, and bouillon powder to taste. Adjust the seasoning according to your preference.
  6. Combine with Tuna:

    • Add the shredded tuna to the pan with the spice mixture. Stir well and cook until the tuna is fully coated with the spice paste and the mixture has slightly dried out.
  7. Serve:

    • Once the tuna is well combined with the spice paste and has reached the desired consistency, remove from heat. Serve hot and enjoy this spicy, flavorful dish.

Note: While it is traditional to fry the tuna before shredding, you may choose to skip this step if you prefer a softer texture. The dish will still be delicious!
