  1. Prepare the Beef:

    • Grind the ingredients for the beef stew (garlic, coriander seeds, salt, and candlenuts) into a fine paste. Crush the ginger slightly.
    • Place the beef pieces in a pot of water and add the ground spice paste along with the crushed ginger and bay leaf.
    • Simmer the beef until it is cooked through and tender. Once done, remove the beef and let it cool slightly. Slice it into pieces according to your preference. For added tenderness and crispiness during frying, gently pound the beef slices.
  2. Fry the Beef:

    • Heat oil in a pan over medium heat. Fry the beef slices until they are crispy and golden brown. Remove and drain on paper towels.
  3. Prepare the Balado Sauce:

    • Grind the ingredients for the balado sauce (red chilies, shallots, garlic, and tomato) coarsely.

    • Add a pinch of salt, sugar, and chicken bouillon powder to the sauce. Stir well to combine.
  4. Combine Beef and Sauce:

    • Once the sauce is cooked, add the fried beef slices into the pan. Stir to coat the beef evenly with the sauce.
    • Cook for a few more minutes until the beef is well-coated and the flavors have melded together. Adjust seasoning to taste if necessary.
  5. Serve:

    • Transfer the spicy beef dendeng balado to a serving dish. Serve it hot with steamed white rice for a delightful meal.
