Spicy Chicken Feet (Ceker Ayam Pedas)

Ingredients:

  • 500 grams chicken feet (cleaned and marinated with lime juice)
  • 2 tablespoons chili sauce (or soy sauce as a substitute)
  • 1 tablespoon sugar
  • Salt (to taste)
  • Black pepper (to taste)
  • 300 ml water

For the Spice Paste:

  • 5 shallots
  • 4 cloves garlic
  • 3 candlenuts
  • 25 bird’s eye chilies
  • 5 red chilies
  • 4 tomatoes
  • 2 stalks lemongrass (white part only)

Instructions:

  1. Prepare the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, candlenuts, bird’s eye chilies, red chilies, tomatoes, and the white part of the lemongrass. Blend until you achieve a smooth paste.
  2. Cook the Spice Paste:

    • Heat oil in a pan over medium heat. Add the spice paste to the pan and sauté until the oil begins to separate from the paste and the mixture becomes fragrant. This may take some time due to the tomatoes, so ensure it reduces slightly and changes color, but do not let it burn.
  3. Add Chicken Feet:

    • Once the spice paste is cooked, add the cleaned chicken feet to the pan. Stir well to coat the chicken feet with the paste.
  4. Season the Dish:

    • Add the chili sauce (or soy sauce), sugar, salt, and black pepper. Mix well to incorporate all the flavors.
  5. Simmer:

    • Pour in the water, ensuring the chicken feet are covered. Reduce the heat to low and let it simmer. Cook until the water is reduced and the sauce thickens, allowing the chicken feet to absorb the flavors.
  6. Final Adjustments:

    • Check the seasoning and adjust with additional salt, pepper, or sugar if needed.
  7. Serve:

    • Once the sauce has thickened to your desired consistency and the chicken feet are tender, remove from heat. Serve hot, garnished with fresh herbs if desired.
