Hot Stuffed Cherry Peppers Recipe

🌶️ Some like it hot, some not so hot! These little red peppers, about 2 1/2″ x 1 1/2″ high, are just right for a medium level of heat. They look lovely on your plate and are perfect when served with broccoli, cauliflower, browned potatoes, and lamb chops. Additionally, they also come as green cherry tomatoes and make a great appetizer, approximately only an inch across and an inch high. The green ones I found were hotter than the red!

Red Cherry Peppers 8
Cottage cheese (or other) 4 tsp

Instructions:

  1. Preparation:

    • Preheat your oven to 350°F (175°C).
    • Cut the top off the cherry peppers and remove the membranes and seeds. Set aside.
  2. Prepare the Filling:

    • Finely chop the onions, mushrooms, and garlic cloves.
    • In a non-stick skillet, sauté the onions, garlic, and mushrooms over medium heat for about 4 minutes until softened. You may use a bit of oil if desired, but it’s not necessary.
    • Sprinkle in the dried oregano and continue cooking for another minute.
    • Drizzle Worcestershire sauce over the mixture, stir well, and remove from heat.
  3. Stuff the Peppers:

    • Carefully fill each cherry pepper with the prepared filling mixture.
  4. Final Touches:

    • Top each stuffed pepper with a teaspoon of sour cream and a teaspoon of yogurt.
    • Sprinkle a little chopped parsley over the peppers for garnish.
  5. Bake:

    • Place the stuffed peppers on a baking sheet and bake in the preheated oven for 30 minutes, or until the peppers are tender and slightly charred.
  6. Serve:

    • Once baked, remove the stuffed peppers from the oven and let them cool for a few minutes.
    • Arrange them on a serving platter and serve hot as a delightful appetizer or side dish.
