Ayam Saus Pedas Padang (Spicy Padang-Style Chicken)

Ingredients

  • 6 pieces of chicken, pre-boiled

Spice Paste:

  • 7 shallots
  • 3 cloves of garlic
  • 6 small chili peppers
  • 1 large chili pepper
  • Black pepper to taste or pepper powder

Additional Ingredients:

  • 3 kaffir lime leaves
  • A small amount of scallions, sliced as desired (I cut them small)
  • 2 small packets of ABC extra hot sauce
  • 2 small packets of tomato sauce
  • Water as needed

Instructions

  1. Prepare the Spice Paste:

    • Blend all the spice paste ingredients (shallots, garlic, small chili peppers, large chili pepper, and black pepper) until smooth.
  2. Cooking the Paste:

    • Heat a little oil in a pan. Add the blended spice paste and kaffir lime leaves, sautéing until the mixture changes color and becomes aromatic.
  3. Incorporate the Sauces:

    • Add the ABC extra hot sauce and tomato sauce to the pan. Mix well to combine all the ingredients.
  4. Add the Chicken:

    • Introduce the pre-boiled chicken pieces to the pan. Stir until the chicken is evenly coated with the spice mixture.
  5. Simmer:

    • Pour a small amount of water into the pan. Allow the mixture to simmer so that the flavors can meld and the chicken absorbs the spices. Add the sliced scallions.
  6. Finishing Touches:

    • Let it cook for a few more minutes, ensuring the flavors have fully infused the chicken. Turn off the heat once done.
  7. Serve:

    • Your Ayam Saus Pedas Padang is now ready to be served. Enjoy this spicy and flavorful dish with your favorite side dishes.
