This is a different twist on the traditional cheesy potatoes. It has a “kick” to it from the pepper cheese. I received this from a friend and have made it many times since. I have received many recipe requests.
Ingredients:
- 26 oz frozen hash brown potatoes
- 1 1/2 cups shredded monterey jack pepper cheese
- 1 cup sour cream
- 1 onion, diced
- 1/2 cup diced pimentos
- 1/2 teaspoon salt
- 1 tablespoon margarine
- 2 cups french fried onions
- 1/2 cup bread crumbs
- 1 tablespoon butter
Instructions:

Preheat oven to 350°F (175°C).

In a large bowl, combine all ingredients except breadcrumbs, butter, and french fried onions; mix well until thoroughly combined.

Spread the mixture into an ungreased 2-quart casserole dish, ensuring an even distribution.

In a separate bowl, toss bread crumbs with butter until evenly coated. Sprinkle the buttered bread crumbs over the potato mixture in the casserole dish.
