Description:
This is a different twist on the traditional cheesy potatoes. It has a “kick” to it from the pepper cheese. I received this from a friend and have made it many times since. I have received many recipe requests.

Ingredients:

  • 26 oz frozen hash brown potatoes
  • 1 1/2 cups shredded monterey jack pepper cheese
  • 1 cup sour cream
  • 1 onion, diced
  • 1/2 cup diced pimentos
  • 1/2 teaspoon salt
  • 1 tablespoon margarine
  • 2 cups french fried onions
  • 1/2 cup bread crumbs
  • 1 tablespoon butter

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, combine all ingredients except breadcrumbs, butter, and french fried onions; mix well until thoroughly combined.

  3. Spread the mixture into an ungreased 2-quart casserole dish, ensuring an even distribution.

  4. In a separate bowl, toss bread crumbs with butter until evenly coated. Sprinkle the buttered bread crumbs over the potato mixture in the casserole dish.

  5. Bake in the preheated oven at 350°F (175°C) for 30-45 minutes or until the bread crumbs turn golden brown and the mixture is bubbly, indicating that it’s perfectly cooked.

  6. Once baked, sprinkle the french fried onions generously over the casserole, adding a delightful crunch and extra flavor.

  7. Return the casserole to the oven and bake for an additional 5 minutes or until the onions turn golden brown, enhancing both the taste and appearance of the dish.

  8. Once done, remove from the oven and let it cool slightly before serving. Enjoy the irresistible aroma and flavors of these Spicy Pepper Jack Potatoes with your loved ones.
