Spicy Sardines Stir-Fry
Ingredients:
- 1 can of sardines (any brand)
- 5 red chili peppers
- 5 bird’s eye chilies (cabe rawit)
- 4 cloves garlic
- 1 onion
- 3 shallots
- A splash of sweet soy sauce (kecap manis)
- 1 tomato
- A pinch of salt
- A pinch of MSG (mecin), Royco seasoning, and black pepper
Instructions:

Begin by preparing your ingredients. Thinly slice the shallots and garlic, and chop the red chili peppers and bird’s eye chilies. Dice the tomato and set aside.

Heat some oil in a wok or large skillet over medium heat. Add the shallots, garlic, and both types of chilies to the hot oil. Sauté until they become fragrant and slightly golden.

Incorporate the diced tomato and sliced onion into the pan, continuing to cook until the onions turn translucent and the tomatoes begin to break down.

Open the can of sardines and add the contents, including the oil, into the pan. Gently stir the mixture, ensuring the sardines are evenly distributed and combined with the aromatic base.

Season the dish with salt, a pinch of MSG (mecin), Royco seasoning, and black pepper to taste. Stir well to blend the flavors.

Add a small splash of sweet soy sauce to enhance the flavor profile. Pour in a little water to adjust the consistency of the sauce, making sure it’s not too thick.
