Spicy Tuna Stir-Fry (Orak Arik Tongkol Pedas)

Ingredients

Ingredient Quantity
Fresh large tuna (pindang) 2 pieces
Green chilies (sliced diagonally) 2 pieces
Large red chilies (sliced diagonally) 2 pieces
Garlic (thinly sliced) 4 cloves
Shallots 4 pieces
Oyster sauce 1 tablespoon
Sesame oil To taste
Sweet soy sauce 1 teaspoon
Chili powder (or fresh chili to taste) To taste
Salt and flavor enhancer (Masako) To taste
Lemon juice (for marinating) To taste

Instructions

  1. Prepare the Tuna: Begin by marinating the fresh tuna in lemon juice for a refreshing tang. You can choose to steam or lightly fry the tuna until it is half-cooked, depending on your preference.

  2. Sauté Aromatics: In a hot pan, add a splash of sesame oil and sauté the sliced garlic and shallots until they are fragrant and golden brown.

  3. Add Chilies and Tuna: Next, add the sliced green chilies to the pan, allowing them to soften slightly before introducing the marinated tuna.

  4. Season the Dish: Lower the heat and pour in the oyster sauce and sweet soy sauce, mixing gently to coat the tuna evenly. Be cautious with salt, as the tuna is already seasoned from the marinade.

  5. Final Touches: Sprinkle chili powder to achieve your desired level of spiciness, followed by a pinch of Masako for added flavor. Stir well to combine all the ingredients.

  6. Serve: Once everything is well mixed and heated through, remove from heat. Your spicy tuna stir-fry is ready to be served, boasting a delightful aroma of sesame oil and a burst of flavors.

Enjoy this vibrant dish as a main course or alongside steamed rice for a complete meal!
