Spicy Chicken (Ayam Saus Pedas)
Ingredients:
- 1/2 kg fresh chicken, cut into pieces
- For the Spice Paste:
- 2 cloves garlic
- 4 shallots
- 8 bird’s eye chilies
- 2 large red chilies
- 1 tomato
- Other Ingredients:
- 1 small bunch green onions and celery, diced
- 1 onion, sliced
- Ground black pepper
- Spicy sauce (to taste)
- Tomato sauce (to taste)
- A splash of soy sauce
- Salt, to taste
- Chicken flavor seasoning
- Lime leaves
- A little water
- Sugar, to taste
- Turmeric powder
Instructions:

Prepare the Chicken: Clean the chicken pieces thoroughly and cut them into desired sizes. Rub the chicken with turmeric and salt. Heat oil in a pan and fry the chicken until golden brown. Remove from oil and drain.

Make the Spice Paste: In a blender, combine garlic, shallots, bird’s eye chilies, red chilies, and tomato. Blend until smooth.

Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant.

Add Other Ingredients: Add the green onions, celery, and sliced onion to the pan. Stir well. Add a splash of water and mix in the spicy sauce, tomato sauce, soy sauce, salt, chicken flavor seasoning, lime leaves, and sugar.

Simmer the Chicken: Add the fried chicken pieces to the pan. Cook until the sauce is absorbed and the chicken is well-coated with the spices. Adjust seasoning if necessary.

Finish and Serve: Once the sauce has reduced and thickened, add the diced green onions and onion slices. Stir to combine. Remove from heat and serve.
