Fiery Spicy Chicken with Tangy Tomato Sauce

Spicy Chicken (Ayam Saus Pedas)

Ingredients:

  • 1/2 kg fresh chicken, cut into pieces
  • For the Spice Paste:
    • 2 cloves garlic
    • 4 shallots
    • 8 bird’s eye chilies
    • 2 large red chilies
    • 1 tomato
  • Other Ingredients:
    • 1 small bunch green onions and celery, diced
    • 1 onion, sliced
    • Ground black pepper
    • Spicy sauce (to taste)
    • Tomato sauce (to taste)
    • A splash of soy sauce
    • Salt, to taste
    • Chicken flavor seasoning
    • Lime leaves
    • A little water
    • Sugar, to taste
    • Turmeric powder

Instructions:

  1. Prepare the Chicken: Clean the chicken pieces thoroughly and cut them into desired sizes. Rub the chicken with turmeric and salt. Heat oil in a pan and fry the chicken until golden brown. Remove from oil and drain.

  2. Make the Spice Paste: In a blender, combine garlic, shallots, bird’s eye chilies, red chilies, and tomato. Blend until smooth.

  3. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant.

  4. Add Other Ingredients: Add the green onions, celery, and sliced onion to the pan. Stir well. Add a splash of water and mix in the spicy sauce, tomato sauce, soy sauce, salt, chicken flavor seasoning, lime leaves, and sugar.

  5. Simmer the Chicken: Add the fried chicken pieces to the pan. Cook until the sauce is absorbed and the chicken is well-coated with the spices. Adjust seasoning if necessary.

  6. Finish and Serve: Once the sauce has reduced and thickened, add the diced green onions and onion slices. Stir to combine. Remove from heat and serve.
