Instructions:
Day 1:
- Prepare Seasoning Mix: In a small bowl, combine salt, onion powder, garlic powder, ground ginger, ground cumin, cayenne, ground coriander, black pepper, and white pepper.
- Sweeten the Meat: In another bowl, mix sugar with 1 tablespoon plus 1 teaspoon of the seasoning mix.
- Marinate the Meat: Cut the meat into strips about 1/2 inch thick by 2 inches long. Evenly season the meat with the sugar-seasoning mixture. Refrigerate the seasoned meat in a covered bowl or plastic zipper bag overnight.
Day 2:
- Heat Oil: Heat 2 tablespoons of oil in a 5-quart pot over high heat until it begins to smoke, approximately 4 minutes.
- Brown the Meat: Add enough meat strips to cover the pot bottom in a single layer. Cook quickly, stirring constantly until browned on all sides. Remove the browned meat from the pot immediately. Repeat with the remaining meat.
- Cook with Seasonings: Add the remaining oil if needed. Stir in the remaining seasoning mix and all the remaining ingredients except the coconut milk. Scrape the bottom of the pot vigorously until the brown bits are loosened.
- Simmer: Cover and cook over high heat for 5 minutes.
- Final Touch: Return the browned meat to the pot. Stir in the coconut milk.
- Serve: Bring the mixture to a rolling boil, then remove from heat and serve hot.
