Thai Style Spaghetti

Ingredients:

  • 3 stalks fresh lemongrass
  • 1 onion
  • 1/2 red bell pepper
  • 1 garlic clove
  • 3 lime wedges
  • 1/2 lb shrimp
  • 10 ml fish sauce
  • 2 1/2 tbsp rice vinegar
  • 1 1/2 kaffir lime leaves
  • 2 hot chili peppers
  • 1 bunch green onions
  • 1 bunch fresh basil leaves
  • 2 tbsp cilantro
  • 1/2 lb spaghetti
  • Black pepper, to taste

Instructions:

  1. Preparation:

    • Clean the lemongrass stalks thoroughly, removing any tough outer layers, and finely chop.
    • Dice the onion and red bell pepper.
    • Mince the garlic clove.
    • Cut the lime wedges for garnish.
    • Peel and devein the shrimp.
    • Prepare the remaining ingredients as specified.
  2. Cooking:

    • Heat oil in a large frying pan over medium-high heat.
    • Add the diced onion and red bell pepper, sautéing until they start to brown, approximately 2-3 minutes.
    • Toss in the minced garlic and sauté for another minute until fragrant.
    • Incorporate the shrimp into the pan along with the fish sauce, torn kaffir lime leaves, sliced hot chili peppers, lemongrass, and rice vinegar. Cook until the shrimp turns pink and is cooked through, around 3-4 minutes.
    • Once the shrimp is cooked, add the sliced green onions, torn basil leaves, and chopped cilantro, stirring for about 30 seconds.
    • Add the cooked spaghetti to the pan, tossing well to coat the pasta evenly with the flavorful sauce and ingredients.
    • Remove the kaffir lime leaves from the pan before serving.
    • Season with black pepper to taste.
  3. Serving:

    • Divide the Thai-style spaghetti into two serving plates.
    • Squeeze a lime wedge over each serving for an added burst of freshness.
