- Halve and deseed the red bell peppers.
- Grill them until the skin is blackened and blistered.
- Allow them to cool, then remove the skin and cut into quarters.

Layering the Phyllo Pastry:
- Melt the butter.
- Brush a sheet of phyllo pastry with melted butter and place it in a 20cm round cake tin.
- Repeat this process with another 4 sheets of pastry, brushing each with melted butter and layering them at right angles.
- Cover the pastry with a tea towel.

- Remove the stalks from the spinach and blanch the leaves in boiling water for 2-3 minutes, or until just limp.
- Pat dry the spinach leaves with paper towels.

- Layer with plain yogurt.
- Sprinkle the crumbled feta cheese over the yogurt.
