Ingredients:

Quantity Ingredient
4 Butter
75g Phyllo pastry
8 Spinach
250g Feta cheese
200g Plain yogurt
2 Red bell peppers
Black pepper
Sesame seeds

Instructions:

  1. Preparation of Red Bell Peppers:

    • Halve and deseed the red bell peppers.
    • Grill them until the skin is blackened and blistered.
    • Allow them to cool, then remove the skin and cut into quarters.
  2. Layering the Phyllo Pastry:

    • Melt the butter.
    • Brush a sheet of phyllo pastry with melted butter and place it in a 20cm round cake tin.
    • Repeat this process with another 4 sheets of pastry, brushing each with melted butter and layering them at right angles.
    • Cover the pastry with a tea towel.
  3. Preparation of Spinach:

    • Remove the stalks from the spinach and blanch the leaves in boiling water for 2-3 minutes, or until just limp.
    • Pat dry the spinach leaves with paper towels.
  4. Assembling the Pie:

    • Crumble the feta cheese.
    • Spread the blanched spinach leaves at the bottom of the pie.
    • Layer with plain yogurt.
    • Sprinkle the crumbled feta cheese over the yogurt.
    • Arrange the grilled red bell peppers on top.
    • Grind black pepper over the peppers.
  5. Final Assembly and Baking:

    • Brush the remaining 3 sheets of phyllo pastry with melted butter.
    • Place them on top of the vegetables.
    • Fold over the edges of the pastry.
    • Brush the top with melted butter.
    • Sprinkle sesame seeds over the pie.
    • Bake at 180°C for 35 minutes, or until golden brown.
