Ingredients:

  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup butter, softened
  • 1 cup all-purpose flour
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 cup mushrooms, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 2 tablespoons sour cream
  • 1 egg, beaten (for brushing)

Instructions:

  1. Make Pastry:

    • In a mixing bowl, beat the cream cheese until light and fluffy.
    • Add the softened butter and mix until well combined.
    • Gradually add the flour, mixing until the dough becomes smooth.
    • Note: The dough will be very sticky at this stage.
    • Wrap the dough in waxed paper and chill it in the refrigerator for at least one hour.
  2. Prepare Filling:

    • In a skillet, melt the 2 tablespoons of butter over medium heat.
    • Add the chopped onion and sauté until tender and translucent.
    • Add the chopped mushrooms and cook until they are tender and any liquid has evaporated.
    • Stir in the salt, dried thyme, and flour until well combined.
    • Add the sour cream and continue cooking until the mixture is thickened.
    • Remove from heat and allow the filling to cool completely.
  3. Assembly:

    • Preheat your oven to 450°F (230°C).
    • Divide the chilled pastry dough in half.
    • Roll out one half of the dough on a floured surface to about 1/8 inch thickness.
    • Using a 2-3 inch round cookie cutter, cut out circles from the rolled dough.
  4. Fill and Bake:

    • Place a spoonful of the cooled mushroom filling onto the center of each dough circle.
    • Brush the edges of the dough circles with the beaten egg.
    • Fold the dough over the filling to form a turnover, pressing the edges together firmly to seal.
    • Place the turnovers on an ungreased baking sheet.
    • Brush the tops of each turnover with more beaten egg.
    • Using a sharp knife, make a small slit in the top of each turnover to allow steam to escape during baking.
    • Bake in the preheated oven for 10 minutes, or until the turnovers are golden brown.
  5. Serve:

    • Remove the turnovers from the oven and allow them to cool slightly before serving.
    • Enjoy these delicious Trader Joe’s Mushroom Turnovers warm as an appetizer or snack!
