Trader Joe’s Mushroom Turnovers Recipe

Ingredients:
- 1 package (8 oz) cream cheese, softened
- 1/3 cup butter, softened
- 1 cup all-purpose flour
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 1 cup mushrooms, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 2 tablespoons sour cream
- 1 egg, beaten (for brushing)
Instructions:

Make Pastry:
- In a mixing bowl, beat the cream cheese until light and fluffy.
- Add the softened butter and mix until well combined.
- Gradually add the flour, mixing until the dough becomes smooth.
- Note: The dough will be very sticky at this stage.
- Wrap the dough in waxed paper and chill it in the refrigerator for at least one hour.

Prepare Filling:
- In a skillet, melt the 2 tablespoons of butter over medium heat.
- Add the chopped onion and sauté until tender and translucent.
- Add the chopped mushrooms and cook until they are tender and any liquid has evaporated.
- Stir in the salt, dried thyme, and flour until well combined.
- Add the sour cream and continue cooking until the mixture is thickened.
- Remove from heat and allow the filling to cool completely.

Assembly:
- Preheat your oven to 450°F (230°C).
- Divide the chilled pastry dough in half.
- Roll out one half of the dough on a floured surface to about 1/8 inch thickness.
- Using a 2-3 inch round cookie cutter, cut out circles from the rolled dough.

Fill and Bake:
- Place a spoonful of the cooled mushroom filling onto the center of each dough circle.
- Brush the edges of the dough circles with the beaten egg.
- Fold the dough over the filling to form a turnover, pressing the edges together firmly to seal.
- Place the turnovers on an ungreased baking sheet.
- Brush the tops of each turnover with more beaten egg.
- Using a sharp knife, make a small slit in the top of each turnover to allow steam to escape during baking.
- Bake in the preheated oven for 10 minutes, or until the turnovers are golden brown.
