Cherries Jubilee Crepes Recipe

Ingredients:

  • 2 oz cream cheese, softened
  • 1 oz cherry brandy
  • 3 tbsp powdered sugar
  • 1 cup dark sweet cherries, pitted
  • 2 fresh cherries, for garnish
  • 1/8 cup sugar
  • 1 pinch nutmeg
  • 1 tbsp lemon juice
  • 1/4 cup brandy
  • 2/3 cup flour
  • 2 large eggs
  • 3 tbsp butter, melted
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tbsp sugar, for crepes

Instructions:

  1. Prepare the Crepes:

    • In a blender, combine flour, eggs, melted butter, salt, milk, and 2 tablespoons of sugar. Blend until smooth.
    • Refrigerate the batter for at least 2 hours or overnight to allow it to rest.
    • Heat a 7 or 8-inch skillet over medium heat and brush it with butter.
    • Pour about 1/4 cup of batter into the skillet, swirling it to coat the bottom evenly.
    • Cook the crepe until the edges begin to brown and the surface is set, then flip and cook the other side briefly. Transfer to a plate and keep warm. Repeat with the remaining batter.
  2. Prepare the Filling:

    • In a bowl, beat together the softened cream cheese, 1 tablespoon of cherry brandy, and powdered sugar until smooth and creamy.
    • Spread about 1 tablespoon of the cream cheese mixture onto each crepe. Roll up the crepes or fold them into quarters.
  3. Prepare the Cherry Jubilee Sauce:

    • Drain the pitted cherries, reserving the syrup.
    • In a saucepan, combine the reserved cherry syrup, sugar, nutmeg, and cornstarch. Heat over medium heat, stirring constantly, until the mixture boils and thickens.
    • Remove from heat and stir in the lemon juice and drained cherries.
  4. Flambe and Serve:

    • Heat the 1/4 cup of brandy in a small saucepan until warmed.
    • Carefully ignite the brandy using a long match or lighter. Pour the flaming brandy over the cherry mixture in the saucepan to flambe.
    • Spoon the cherries and sauce over the prepared crepes.
