Perfect for a quick and flavorful meal, this dish combines the sweetness of fresh pineapple with savory lobster and a hint of brandy and Grand Marnier for a burst of flavor in every bite. Impress your guests or simply treat yourself to this delightful culinary creation!

Ingredients:

  • 1 fresh pineapple
  • 1 onion
  • 1/2 bell pepper
  • 1/2 bell pepper (different color)
  • 4 mushrooms
  • 1 lobster tail
  • 2 tablespoons brandy
  • 1 tablespoon Grand Marnier
  • Pico-Pepper sauce, to taste
  • Clarified butter, for sautéing

Instructions:

  1. Prepare the Pineapple Boat:

    • Cut a small pineapple in half lengthwise.
    • Carefully remove the inside meat, cutting it into spears, and set aside. Be cautious not to puncture the shell of the pineapple, as it will serve as the vessel for the finished dish.
  2. Prepare the Ingredients:

    • Dice the onion, mushrooms, and bell peppers into cubes approximately 1/2-inch in size.
    • Cut the lobster tail into bite-sized pieces.
    • Set aside the prepared pineapple spears.
  3. Sauté the Ingredients:

    • In a pan, heat clarified butter over medium heat.
    • Sauté the diced onions, bell peppers, lobster, and mushrooms until they are tender and lightly browned.
  4. Add the Pineapple:

    • Once the other ingredients are cooked, add the pineapple spears to the pan.
    • Stir gently to combine, ensuring the pineapple does not overcook and become too soft.
  5. Season and Flambé:

    • Season the mixture with Pico-Pepper sauce to taste.
    • Carefully add the brandy and Grand Marnier to the pan, then ignite with a match to flambe the mixture. (Be cautious when working with flames.)
  6. Prepare the Pineapple Shell:

    • While the mixture is cooking, broil the empty pineapple shell until the edges are crisp and the shell is heated throughout.
  7. Assemble the Dish:

    • Once the mixture is cooked and flambeed, carefully place it back into the prepared pineapple shell.
  8. Serve:

    • Just before serving, pour the remaining Grand Marnier into a spoon and ignite it with a match.
    • Pour the flaming Grand Marnier over the mixture in the pineapple boat for a dramatic presentation.
    • Serve immediately and enjoy the explosion of flavors!
