Grilled Tilapia (Mujaer Bakar)

Ingredients:

Tilapia (cut into pieces or whole) 1 kg

For the Marinade:

Ingredient Quantity
Garlic cloves 5 cloves
Fresh turmeric (thumb-sized) 1 piece
Salt 1 tablespoon

For the Basting Sauce:

Ingredient Quantity
Garlic cloves 3 cloves
Shallots 4 pieces
Fresh ginger (thumb-sized) 1 piece
Salt 1/2 tablespoon
Sweet soy sauce (Kecap Bangau) 3-4 tablespoons
Vegetable oil 2 tablespoons

Instructions:

  1. Prepare the Tilapia:
    Begin by thoroughly cleaning the tilapia. If you prefer, you can cut it into pieces or leave it whole depending on your preference.

  2. Marinating the Fish:
    Using a food processor or mortar and pestle, grind the garlic cloves, turmeric, and salt to create the marinade. Once ready, coat the cleaned tilapia with the marinade and let it sit for at least an hour in the refrigerator. This allows the flavors to penetrate and infuse the fish for a more flavorful result.

  3. Prepare the Grill:
    Preheat your grill or griddle (you can use a happy call pan or any grill available). Arrange the marinated tilapia on the grill.

  4. Basting the Fish:
    While the fish is grilling, prepare the basting sauce by blending the garlic, shallots, ginger, and salt together. Add the sweet soy sauce and vegetable oil, mixing well. Begin basting the fish with this sauce as it grills. Flip the fish once it appears cooked on one side, and continue to baste as needed until fully cooked.

  5. Serve:
    Once the tilapia is perfectly grilled and golden, remove it from the grill and serve with sambal (spicy Indonesian chili sauce) and fresh vegetables as a side.
