Turmeric Powder (Haldi) 1 tsp
Garam Masala Powder 1 tsp
Coriander Powder (Dhania) 1 tsp

Red Chili Powder To taste
Cumin Seeds (Jeera) 1 tsp

Instructions

  1. Boil the Potatoes: Start by boiling the potatoes in a pressure cooker for 2 whistles. Once done, peel and chop them into small pieces.

  2. Cooking the Potatoes: In a kadhai (pan), heat some oil. Add cumin seeds (jeera) and the chopped potatoes. Sauté them for a few minutes. Add a pinch of turmeric powder (haldi) and stir. Cook until the potatoes turn light brown.

  3. Spices and Tomatoes: Now, add the turmeric powder, garam masala, coriander powder, and pureed tomato. Cook for about 2 minutes, then set the pan aside.

  4. Cooking the Fenugreek Leaves: In a separate small pan, heat some oil and add the sliced onions and grated ginger. Sauté until the onions soften and turn light brown.

  5. Add Fenugreek Leaves: Once the onions are softened, add the chopped fenugreek leaves (methi) and cook until the leaves wilt and soften.

  6. Mixing Everything Together: Add the cooked fenugreek mixture to the potato mixture. Stir well to combine.

  7. Final Cooking: Place the kadhai back on the stove and cook for an additional 2 minutes to allow the flavors to blend together.
