Begin by boiling the red gram (dal) in the water it has soaked in, using a vessel or pressure cooker. For best results, cook until tender; my pressure cooker requires just one whistle. While the dal cooks, prepare the remaining ingredients to ensure a seamless cooking experience.

Once the dal is ready, heat one tablespoon of oil in a kadai or deep vessel. Introduce the asafoetida powder, followed by mustard seeds, cumin seeds, and curry leaves, allowing them to sizzle and release their aromatic oils quickly.

As soon as the mustard seeds begin to splutter, add in the minced garlic, stirring until it becomes fragrant.

Incorporate the sliced onions and sauté until they achieve a light golden brown color, enhancing the overall flavor of your dal.

Next, add the stock cube (if using) and continue sautéing to infuse the mixture with rich flavors.

When the wonderful aromas fill the kitchen, add the chopped tomatoes along with the spice powders: turmeric, chili powder, garam masala, cumin powder, and coriander powder. Stir well to combine, allowing the spices to coat the tomatoes beautifully.
